  1. Beautiful moist, almost sweet, bread that turns out fantastic from the bread maker. I altered it a bit because I didn't have the right ingredients on hand:increase onion to 1 1/2 Tbsp, decrease caraway to 1 Tbsp, replaced the cottage cheese with ricotta, heated 1/4 water and seeped the seeds a few minutes before adding remainder of liquid ingredients.I can't wait to try it with dill!

  2. Made in my breadmaker with spectacular results! As I love dill and caraway seeds, I used both. I also added a tablespoon of mixed seeds for extra crunch. Rose very high and was crisp on the outside and very moist on the inside - a wonderful bread - thanks for posting! Made for ZWT3. FT:-)

  3. This bread is crusty on the outside and moist and delicious on the inside. I made it with 1 T dill and 1 T caraway seed, and the flavor was wonderful! I also made this on the dough setting in my bread maker and then baked it in the oven. Bake time was more like 45 minutes for me, but my oven is not very good. Thanks AB Fan!

I learned how to cook from my mom, and love to putz around in the kitchen. I watch many shows on The Food Network, too, though Good Eats is my favorite. I have many recipes of my own but am always looking for something that's just a bit different. I am now on the look out for great tasting lower carb recipes, and for natural/organic, whole foods. Feel free to send me Zmail! My photo - this a photo was taken at The Hofbrau Haus in Munich, Germany in April 2007. My mom and I took a wonderful 3-week tour last year and ate here twice. The food was homey and delicious, and the bier was great! I can't believe I finished the whole thing...<a href="http://photobucket.com/icons/" target="_blank"><img src="http://i23.photobucket.com/albums/b379/ilikeggs0607/icons/z5587136.jpg"></a><a href="http://photobucket.com" target="_blank"><img src="http://i196.photobucket.com/albums/aa9/deo0519/ZWT3/ab_fish_small.jpg" border="0" alt="Photo Sharing and Video Hosting at Photobucket"></a><a href="http://photobucket.com" target="_blank"><img src="http://i196.photobucket.com/albums/aa9/deo0519/ZWT3/ab_sm_small.jpg" border="0" alt="Photo Sharing and Video Hosting at Photobucket"></a><a href="http://photobucket.com" target="_blank"><img src="http://i80.photobucket.com/albums/j166/ZaarNicksMom/houdini6.jpg" border="0" alt="Photo Sharing and Video Hosting at Photobucket"></a><img src="http://i3.photobucket.com/albums/y53/duch*eSS13/Zaar%20World%20Tour%203/ZWT3-Participation.gif"><img src="http://i23.photobucket.com/albums/b399/susied214/projects/200_PACpic.jpg" border="0" alt="Photo Sharing and Video Hosting at Photobucket"><img src="http://i3.photobucket.com/albums/y53/duch*eSS13/Zaar%20World%20Tour%204/ZWTAB-tg.gif"><img src="http://img355.imageshack.us/img355/3476/mybanner483b81c1ea2dfah7.jpg">

I love rye bread, so something I have always wondered about is why there are caraway seeds in it. It seems to be some kind of tradition. The obvious answer would be "for their flavor", as they're quite flavorful.

Caraway has several healthy flavonoid antioxidants like carotene, cryptoxanthin, lutein, and zeaxanthin. These compounds aid in the removal of harmful free radicals from the body, and can help protect from infection, cancers, aging, and degenerative neurological diseases.

Caraway is part of the Apiaceae family which includes carrot, coriander, fennel, dill and cumin. Nowadays it is predominantly cultivated in Finland and the Netherlands, as well as Germany, Russia and Morocco.

What's so special about caraway? ›

Does caraway taste like dill? ›

Caraway, anise, and fennel seeds are three straightforward substitutes for dill seed, and they are all related. Caraway seeds are pungent and bold, with notes of camphor and just a spark of licorice. Both anise and fennel seeds are valued for their licorice-like qualities, which is a secondary flavor in dill seed.

What does caraway go well with? ›

They pair well with other common spices, such as cumin, coriander, and mustard seeds. Although commonly used in rye bread, caraway seeds can also be found in various meat dishes, stews, pickles, and cheeses.

What flavor do caraway seeds add? ›

Caraway has a very pungent aroma and taste. The flavor of anise or licorice is the dominant one, with hints of citrus and pepper contributing brightness and warmth. There is also a bittersweet quality that somewhat mitigates the licorice note, and keeps it from overpowering all of the other flavors.

Why do they put caraway seeds in rye bread? ›

Rye bread often contains caraway seeds. They're sort of halfway between fennel and cumin in flavor—a little sweet, a little spicy. Caraway seeds say 'rye' to many people, and they're also supposed to help with digestion too.

Why are there caraway seeds in rye bread? ›

In fact, we have our very own version of a sourdough Light Deli Rye with caraway (see above), and not because it wants for flavor—it has plenty of that—but because when used judiciously, caraway can enhance the overall flavor profile. Plus, it's perfect for a pastrami sandwich.

Can I omit caraway seeds in rye bread? ›

Deli rye often contains caraway, however the bread is excellent without it as caraway often is predominant, covering the milder rye flavor. Another favorite of mine is Limpa bread, a Swedish rye that can use orange peel, caraway, anise and/or fennel for a delightful flavor.
