Do these cookie dough brownie bombs look familiar? They should, because they’ve been blowing up Pinterest for quite a while thanks to my friend, Hayley aka The Domestic Rebel. Her signature cookie dough brownie bombs are, of course, a star recipe in her recently released cookbook, Out of the Box Desserts!

But if you just can’t wait to get your hands on this book (and I wouldn’t blame you), let’s dig into these cookie dough brownie bombs to tide you over.

The concept is so simple that it’s mind-blowing. Like… how has this not happened before??

Basically you take a ball of cookie dough (egg free, of course) and wrap a brownie around it. Yes. Wrap abrownie, fully baked and then smushed flat, around the cookie dough. Then you dip the WHOLE THING in chocolate. Add chocolate chips on top (because, clearly there isn’t enough here already), and there you have it, folks.

Yield: 15 truffles

Just imagine if you could stuff cookie dough inside a brownie and cover it all in chocolate... guess what? You can! And it's as devilishly delicious as you dreamed it would be.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup white sugar
  • 2 tbsp milk
  • 1 tbsp vanilla extract
  • 1 3/4 cups all purpose flour
  • pinch salt
  • 1 cup miniature chocolate chips
  • 1 - 9x13 pan of brownies, baked and cooled
  • 12-16 ounces chocolate melting candy (like Wilton's, Merkens, or Ghirardelli)
  • 1/2 cup miniature chocolate chips

Instructions

In the bowl of a stand mixer, beat together the butter, brown sugar, sugar, milk, and vanilla.

Mix in the flour and salt until dough forms. Mix in the 1 cup miniature chocolate chips.

Scoop tablespoon portions of dough onto a baking sheet. Freeze for about 30 minutes.

Cut the brownies into 15 squares. Take a square of brownie and flatten it with your hands or a rolling pin. Wrap the flattened brownie around a ball of cookie dough and repeat with all of the cookie dough and brownies.

Place the wrapped dough on the cookie sheet and freeze again for about 20 minutes.

Melt the chocolate candy according to the directions on the package. Dip each brownie-wrapped dough ball into the chocolate, shake of the excess, and place on a silicone baking mat or piece of parchment paper to cool and harden.

Top with miniature chocolate chips before the candy coating hardens.

Notes

Short on time? Try these time-saving tricks:

  • Instead of making your own egg-free cookie dough, try using this store-bought (also egg-free) cookie dough product. I find it at Target.
  • You could also use store-bought brownies!
  • Be sure to use chocolatecandy melts orwafers. NOT chocolate chips. This will save you a lot of time and headache, since candy melts are designed for melting and coating (chocolate chips are NOT).
